Students develop skills to critically evaluate nutrition information and apply it personally and professionally. They learn the principles of nutrition and gain essential knowledge on foods, vitamins and metabolic processes that equips them to support patients with clinical assessment, interventions, education and advocacy.

1240 Foundations in Nutrition: Navigating Science and Application

This course is designed to provide a foundation of knowledge required for future healthcare coursework and nursing practice. Students will develop skills to critically evaluate nutrition information from varied sources and apply that knowledge personally and professionally. In addition, the course emphasizes understanding of the evolving and complex nature of nutrition science and the unique needs of individuals and diverse populations. Through the lens of nutrition science and scientific research, topics include the role of the macro- and micronutrients in health and disease; dietary supplements; energy balance; disordered eating; and fundamentals of a healthy, varied diet through the lifespan.
